Yesterday I woke up and after working out I made a delish Mint Watermelon slush/smoothie thing. I snagged it from my favorite blog, This Rawsome Vegan Life. Em's beautiful raw and vegan recipes are so inspiring and creative. I love recreating them for my family! Not to mention her incredible photography that makes me want to eat my computer screen...Anyways, this recipe could not have been more perfect. I slurped it down while admiring the August sunshine. Can't believe school is around the corner!
Aren't the mint specks just beautiful against the pink of the refreshing watermelon?

Refreshing Mint Watermelon Smoothie:
1/4 watermelon (if you freeze it ahead of time you don't need to add ice)
1 c. water (or less, depending on how thick and icy you want it)
small handful of preferably freshly picked mint!
